The Caves are Poured!

The concrete roof of the cheese aging caves at the Fifth Town Artisan Cheese Factory was poured last week, while the weather was warm enough to proceed. Once the concrete has cured enough (2-4 weeks), the form work will be removed and the 'caves' will be insulated and waterproofed. As soon as the ground thaws enough, the caves will be buried in an artificial hill, planted with wild flowers. Since the 'caves' will be underground, they're climate will be consistent, achieved with radiant heating and cooling lines cast directly in the concrete of the caves.
