Francis speaks at Ontario Cheese Society Conference
Francis recently took part in a panel discussion entitled "So You'd Like to Start a Cheese Business?" held at the Ontario Cheese Society's 3rd Conference and Annual General Meeting (http://www.ontariocheese.org/). The Cheese Conference is held in conjunction with the 24th annual Toronto Wine and Cheese show held at Toronto's International Center on the weekend of March 23, 2007.
The panelist included a representative from the DFO (Dairy Farmers of Ontario), a cheese maker and a cheese factory contractor/cheese maker. Each panelist described the pitfalls and rewards of the artisan cheese industry, while Francis' presentation focused on the design of environmentally-friendly cheese facilities. The discussion was followed by a Vermont Artisan Cheese Tasting and a networking session.
