Fifth Town wins cheese awards

Fifth Town has won several cheese awards at the annual Royal Winter Fair Cheese Competition in Toronto, including three first prize ribbons and one Grand Champion title. This is an exceptional result considering that Fifth Town started producing cheese from their new sustainable factory less than 5 months ago. Says Owner Petra Cooper "We are off to a great start as a new enterprise that desires to make a difference to the culinary and economic life of the community, and demonstrate to all those skeptics out there that small scale, local dairying can indeed succeed on all measures in Ontario." For more information see http://www.fifthtown.ca/.

Fifth Town Grand Opening!
The Fifth Town Artisan Cheese Factory held its grand opening this past Saturday and Sunday. The festivities included a Wine and Cheese sampling, an art tour and a building tour. Francis led the 12 building tours and provided detailed explanations of the ground source heat loops and pump and explained how the system both heats and cools the building and the refrigerators. Francis also answered questions from the visitors regarding the rain water cistern, the constructed wetlands, the aging caves, the wind mill and solar panels and the 'green' building materials, both inside and out. Visitors could also take a guided tour of the sculptural art installation on the grounds. Seven artists completed several pieces of art with reclaimed and recycled construction materials, continuing the sustainable theme of the building. Carlyn Moulton of the Oeno Gallery, which curated the Art show, also provided the commentary. Over 700 people attended the festivities during the 2 days.

The Caves are Poured!
The concrete roof of the cheese aging caves at the Fifth Town Artisan Cheese Factory was poured last week, while the weather was warm enough to proceed. Once the concrete has cured enough (2-4 weeks), the form work will be removed and the 'caves' will be insulated and waterproofed. As soon as the ground thaws enough, the caves will be buried in an artificial hill, planted with wild flowers. Since the 'caves' will be underground, they're climate will be consistent, achieved with radiant heating and cooling lines cast directly in the concrete of the caves.

Remember slinkies?
The installation of the geothermal 'slinky' loops for the ground source heat pump is underway at the Fifth Town Cheese Factory. Once the building is operational, a refrigerant liquid will be circulated through the plastic piping and exchange heat with the ground, either extracting it, or releasing it, depending on the season. Other than the electricity to operate the pump, the heat is free. The loops will be buried under two meters of native soils after they have been inspected, so will no longer be visible, except for a slight raised area at one end.

The Fifth Town Artisan Cheese Factory recently held a Site Review Open House. Shawn and Petra Cooper, the Owners of the facility, decided to invite their neighbours and friends to the Open House to give everyone an opportunity to see the sustainable features of the project first hand, before they are covered up with finishes. Visitors were offered light refreshments in a tented area of the site, followed by brief presentations on highlights of the green building project. More than 150 people took part in the guided tours of the facility, narrated by Francis Lapointe Architect, Peter Knudsen, Contractor and Gordon McAlary, P. Eng. Guest of honour included the Honourable Leo P. Finnegan, Mayor of Prince Edward County as well as the Honourable Leona Dombrowsky, Ontario's Minister of Agriculture and Lyle Van Clief, the former Federal Minister of Agriculture. Fifth Town Cheese Factory proceeding on schedule
Construction on the exterior walls for the Fifth Town Cheese Factory is nearing the halfway point. The exterior walls are built with Durisol stay-in-place wall forms (http://www.durisol.com/) which are manufactured from a mixture of raw wood chips and shavings, neutralized and mineralized then bonded together with Portland cement. The R-value of the Durisol blocks combined with the optional built-in insulation and the thermal mass of the concrete far exceeds minimum standards. After the wall forms where erected and steel reinforcing placed, the cavities of the forms where filled with LaFarge's 'Agilia' concrete (http://www.lafarge-na.com/) a concrete mixture that contains a plasticizer and 50% slag, a by-product of the steel industry. As a result, the exterior walls of the factory contain a high percentage of recycled material which are extremelly durable, energy efficient and will not permit the growth of molds.
